Chicken Salad Recipe

An easy to make and delicious chicken salad recipe for sandwiches or as a topping on green salads.  The chickens from Costco or any other grocery store work well because they have great flavors from being pre-seasoned prior to roasting.

 

Chicken Salad

Prep Time: 20 minutes

Yield: 4-6 Servings

Ingredients

  • 1 Whole Roasted Chicken (from local grocery, such as Safeway or Costco)
  • 2 Stalks Celery
  • 2 Full Green Onions
  • ¼-½ Cup Mayonnaise (can substitute with the light version)
  • Pepper and Salt to Taste

Directions

  1. Remove the skin and as much fat as you can from the cooled chicken. Remove the white and dark meat from the bones and cut it into large chunks. Put into a Cuisinart food processor with the normal blade.
  2. Cut the celery into 2" strips. Cut off the ends of the green onion, and cut it up. Add both into the processor.
  3. Pulse the processor 5 - 10 times, for about a second each time. The chicken should be about the size of small peas. You can blend more if you like a smoother texture.
  4. Remove from the processor, and place into a large bowl. Mix in the mayonnaise, a little bit at a time until it reaches the consistency you like. I typically stop once it starts to hold.
  5. Add salt and pepper to taste.

Tips

When mixing in the mayonnaise, you can add chopped apples, nuts, raisins, or anything else you like for different flavors and textures.

  1. Someone brought Safeway Chicken salad to a church potluck. It was excellent. I wanted to know how to duplicate it. I used this as a basic recipe but I used equal parts of yogurt and mayo, four stalks of thin sliced celery, tops from 4-5 green onions and a sprinkling of celery seeds and dill (the freezer dried kind.

    Chopped chicken by hand. Came out wonderful. Suitable for sandwiches or for a lettuce cup.
