Chicken Soup with a Giant Matzo Ball

Sometimes you just want to have a comforting bowl of chicken soup. This simple and basic recipe is incredibly satisfying when cozying up in front of a fireplace. Or you may just want the broth to make some good ole’ Matzo Ball soup, Gumbo, and the list goes on.

Chicken Soup for the Soul

Prep Time: 15 minutes

Cook Time: 2 hours

Yield: 6-10 servings


  • 1 Whole Chicken (5-6 lbs); make sure to rmove any innards from the cavity of the chicken
  • 4 Celery Stalks cut in thirds
  • 3 Carrots cut in thirds
  • 2 Onions quartered (yellow, white, brown)
  • 2 Bay Leaves
  • 8 Cups Water
  • 1 T Salt


  1. Add water to a large stock pot
  2. Add the remaining ingredients
  3. Bring water to a boil
  4. Reduce to a simmer
  5. Partially cover with a lid
  6. Cook for 20 minutes per pound of chicken
  7. Remove chicken
  8. Strain broth into a separate pot
  9. Remove skin, fat, and bones from chicken
  10. Add shredded or cut chicken into the broth


Add additional ingredients to your heart's content such as cooked noodles or rice, celery slices, carrot slices, or even a big Matzo Ball. Heat it up a bit more to cook through any added vegetables.
